This recipe is a quick and easy dish that has 5 ingredients (excluding seasoning) and takes 20 mins prep time.
Bring some water to the boil, add salt and vegetable oil and 5 cloves of garlic to the water. Add spaghetti and allow to cook for 5 minutes
In the same pot,de-stalk and add the kale. Allow both spaghetti and kale to cook together for a further around 5-8 minutes.
Remove the kale and garlic with a little of water and blend. Add more salt if your prefer at this stage. Strain spaghetti and place back into the same pot.
Pour the blended kale mixture on the strained spaghetti and mix.
Plate your spaghetti, add ricotta cheese, and grated parmesan on the top. I did not have parmesan, I opted to use mozzarella instead. Season with salt, pepper and olive oil if you prefer.
